Can we assign a delivery server to just 1 customer?

Is that possible? So that the given delivery server will only be used by that customer.

You need to create a group and from Servers select only that server, then add your customer in that group.
Backend > Customers > Groups

... or you can simply edit the delivery server and assign it to a customer...
