setting up sending domains in sendgrid

Testing this, and it seems that the from email for customer emails is the one we set up in the delivery server admin area, even with 'Force FROM email' set to NEVER

This is an issue, as customers will want to send from their own domains

Can someone please advise?

That's how things work, if you set any other address that's not known to SG, your emails will fail. This is just how things work. Even if SG would've allow you to send from any email, your emails would end up in spam because they'd miss the DNS records. You can either define a generic address for emails, or create new ones during the onboarding process of your customers, or use your own pmta/postal server with your own rules.
This is not a bad ux, nor a limitation of MailWizz. This is just how things currently work.
