You can use Advance recurring from confirmation step, for max run add 1 to run only one time.

Isnt it simpler to just modify your cron job for send-campaigns to only run during weekdays? So instead of the * * * * * frequency, you change it to * * * * 1-5?

Advanced recurring creates recurring campaigns, so your campaign will send over and over using that frequency, and I don't think that's what you're after.
