Plain-text mails post as multipart (html + text) with messed up formating

When I create a plain-text mail and send it with MailGun, it arrives as plain text, but when I use SparkPost, it arrives as a combination of HTML and text.

I've contacted SparkPost, and after some investigation, they say:

I can tell you that SparkPost will only send what is in the content. It won’t alter anything once it is received.

Any ideas why that might happen?
 
Update:

For some reason I couldn't send with Mailgun after I've upgraded to 1.5, so I installed Sendmail as a delivery server.

I sent a test mail of my plain text message, and it was fine. So I sent to my whole list, and it added a "html" layer, and it's all in one paragraph.

Might be because of the PHP Version, you need PHP >= 5.6 afaik.

It added a html layer even if you only selected to send plain text only ? Are you sure it's html and it's not just plain text? Can you add the source of the whole email here?

I think you are onto something. Do you think you can PM me with backend url and login to your app and FTP access so i can check a few things ?
