Gmail only SMTP servers

I would like to send out emails to our subscribers with gmail accounts from a select group of domains/IPs.

Mailwizz allows you to enter a domain (i.e: yahoo.com) and set a policy to Allow or Deny.

Do I need to segregate the subscribers in different ISP segments for specific domains (like Yahoo) or can I rely on the delivery server to do that?

You have a few options to do this and tbh, I would choose segmentation, where I create a few segments with the right domains. I think it will wprk much better this way.
Otherwise, sure, domain policies might be an answer, just make sure that there are servers to pick-up emails that other servers don't send to, otherwise you'll end up with unsent emails.
