If your SMTP server supports FROM spoofing, you can edit the delivery server and set "force from" to Never. Then see if delivery still works, if it does not, it means your server cannot support this feature and your only option is to assign a separate delivery server for your customer with his own email address.
Or you can use a generic email address as the sender, something like mailer@your-domain.com, like all the services out there do.
